A cup measures space; a gram measures mass

A measuring cup tells you how much room an ingredient occupies. A kitchen scale tells you how much matter is in that room. Those are related measurements, but they are not interchangeable without knowing what fills the cup.

Flour has air between its particles. Sugar crystals settle more tightly. Butter is compact and predictable when cool, while honey flows and clings. The same 100g therefore takes up a different volume in each case.

The difference in real numbers

A cup of all-purpose flour weighs about 120 grams when spooned and levelled, while a cup of granulated sugar weighs closer to 200 grams. Honey, which traps almost no air, weighs about 340 grams per cup.

All three can sit in the exact same measuring cup, yet none of them share a weight. A recipe that simply says ‘1 cup’ without naming the ingredient is really describing three different amounts of mass.

The useful shortcut is ingredient-specific

Temperature and humidity move the number slightly

Density is not perfectly fixed even for a single ingredient. Cold butter packs into a cup differently than softened butter, and flour absorbs a little extra moisture on a humid day, which can add a few grams to the same cup.

These shifts are usually small enough to ignore for everyday baking. They mainly explain why two people using the same recipe and the same bag of flour can still measure a slightly different weight for what looks like an identical cup.

When the scale should win

Choose weight when the recipe is delicate, when the ingredient is easy to compact, or when you want to repeat the bake later. Choose volume when the recipe is written that way and the ingredient, utensil, and leveling method are clear.
