How to scale a recipe without losing

Scale every ingredient by the same factor

To double a recipe, multiply each ingredient by two. To make three quarters of a batch, multiply each amount by 0.75. The ratio matters more than whether the final numbers look tidy.

Write the factor at the top of the recipe before changing a single line. This prevents the common mistake of adjusting the flour and forgetting the liquid, fat, salt, or leavener that makes the formula work.

Leavening does not always scale in a straight line

Baking soda, baking powder, and yeast do not always need the exact same multiplication as the rest of the recipe. Doubling a cake can sometimes mean slightly less than double the leavener, since too much can leave a bitter taste or an overly open crumb.

This is a judgment call rather than a fixed rule, so start with the proportional amount and adjust only if a specific formula or experience says otherwise.

Convert after the multiplication

If you convert each line into cups first and round aggressively, small errors accumulate. Keep the scaled weight where possible, then use PantryGauge to translate the finished amount into cups, tablespoons, or teaspoons.

The pan needs to scale too

Doubling a recipe without changing the pan often means a thicker layer that bakes unevenly, dense in the middle before the edges are done. Match the pan area to the batter volume, or split a doubled batch across two pans of the original size.

A quick way to check is to compare the surface area of the old and new pans; batter depth, not just batter weight, is what changes bake time.

A worked example

A cookie recipe calling for 250g flour, 150g sugar, and 115g butter needs a factor of 1.5 to make one and a half batches. That gives 375g flour, 225g sugar, and 172.5g butter, keeping the same ratio between every ingredient.

Small batches need more care

A half teaspoon becomes a quarter teaspoon when halving a recipe, but a single egg or a pinch of spice may need a practical judgment. Mark those exceptions separately so they do not get confused with the exact arithmetic.
