Diameter is misleading; area is the real number

A pan that looks only a little bigger in diameter can hold noticeably more batter, because area grows with the square of the radius. An 8-inch round pan holds about 50 square inches, while a 9-inch round pan holds about 64 square inches, roughly a quarter more for a single extra inch of diameter.

A useful rule of thumb: an 8-inch square pan (64 square inches) and a 9-inch round pan (about 64 square inches) hold almost the same amount of batter and can usually substitute for each other with little to no change in bake time.

The real substitution rule

When the new pan holds noticeably less batter for the same recipe, the batter sits deeper and generally needs a longer bake, sometimes at a slightly lower temperature so the edges do not finish before the middle. When the new pan holds more, the batter sits shallower and usually finishes faster.

Keep the original oven temperature as the starting point in most cases. A large jump in pan size occasionally calls for a small temperature adjustment, but time is the variable that changes first and most often.

Never fill past two-thirds

Cake batter rises as it bakes, so a pan filled more than about two-thirds full risks overflowing in the oven. If a recipe's batter does not fit the new pan at that fill line, bake the extra portion separately as a few cupcakes rather than forcing it all into one vessel.

This rule holds regardless of pan shape, so it applies equally when moving between round, square, and rectangular pans.

Material changes the outcome too

Glass and dark metal pans absorb and hold heat differently than light metal, so a recipe written for a metal pan may need the oven turned down by about 25 degrees Fahrenheit when baked in glass, to avoid overly browned edges. This adjustment is independent of any change in pan size.

Whatever the pan, a doneness test such as a toothpick or a light touch on top remains the reliable way to check a cake, more reliable than trusting the clock alone after a pan substitution.

A quick pan-area reference

For round pans: 8-inch is about 50 square inches, 9-inch is about 64 square inches, and 10-inch is about 79 square inches. For square and rectangular pans: 8-inch square is 64 square inches, 9-inch square is 81 square inches, and a 9x13-inch pan is 117 square inches.

Use area, not diameter, to judge how close two pans really are. Two pans with a similar area behave far more alike than two pans with a similar diameter but a different shape.
